Roasted Oyster Mushrooms with Arugula and Walnuts 🥗

This simple and bright salad made with earthy oyster mushrooms makes an ideal starter for a healthy meal or flavorful side dish.

Ingredients:
- 10 oz. oyster mushrooms, gently separated into large pieces
- 1 T. extra virgin olive oil
- ¼ t. fine sea salt
- pinch ground black pepper
- 1½ c. packed arugula leaves
- 1/3 c. chopped walnuts, toasted
- additional olive oil for serving, if desired

Recipe:
1. Preheat the oven to 375 degrees F.
2. Spread the mushrooms in a single layer on a rimmed baking sheet. Drizzle with olive oil, and sprinkle with salt and pepper. Toss gently and spread back into a single layer.
3. Roast for 15 minutes. Check the mushrooms. If any liquid has formed on the sheet pan, carefully drain it off. Roast the mushrooms for 5-10 more minutes, until browned and tender.
4. Add the arugula to a serving plate. Top with the mushrooms and toss gently. Sprinkle the walnuts over the salad. Garnish with additional olive oil, if desired. Serve warm or at room temperature.

Creamy Chicken Marsala Looking to get more prote

Creamy Chicken Marsala

Looking to get more protein in your meals? This creamy chicken marsala featuring rich, savory crimini mushrooms is just what you need.

Ingredients:
-2 T. olive oil
-2 T. butter, divided
-4 boneless, skinless chicken breasts
-Kosher salt and freshly ground black pepper, to taste
-8 ounces crimini or white button mushrooms, cleaned and sliced
-2 cloves garlic, minced
-3/4 c. Marsala wine
-1 c. heavy cream
-1 T. fresh thyme leaves, plus more for garnish

Recipe:
1. Heat olive oil and 1 T. of butter in a large skillet over medium-high heat. Season chicken breasts generously with salt and pepper on both sides and cook until golden-brown and internal temperature reaches 165°F, about 6-7 minutes per side. Remove chicken from skillet. Set aside and keep warm.
2. Heat remaining butter in same skillet. Add mushrooms and sauté until tender, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds to 1 minute.
3. Pour in wine and simmer, scraping bottom of pan to release any browned bits. Reduce heat to medium-low and add cream. Simmer gently until slightly thickened, about 5 minutes. Add thyme and season with salt and pepper, to taste.
4. Return chicken to skillet and top with mushroom Marsala sauce. Allow chicken to fully reheat in sauce, about 3-4 minutes. Garnish with additional thyme and serve.
