Creamy Chicken Marsala

Looking to get more protein in your meals? This creamy chicken marsala featuring rich, savory crimini mushrooms is just what you need.

Ingredients:
-2 T. olive oil
-2 T. butter, divided
-4 boneless, skinless chicken breasts
-Kosher salt and freshly ground black pepper, to taste
-8 ounces crimini or white button mushrooms, cleaned and sliced
-2 cloves garlic, minced
-3/4 c. Marsala wine
-1 c. heavy cream
-1 T. fresh thyme leaves, plus more for garnish

Recipe:
1. Heat olive oil and 1 T. of butter in a large skillet over medium-high heat. Season chicken breasts generously with salt and pepper on both sides and cook until golden-brown and internal temperature reaches 165°F, about 6-7 minutes per side. Remove chicken from skillet. Set aside and keep warm.
2. Heat remaining butter in same skillet. Add mushrooms and sauté until tender, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds to 1 minute.
3. Pour in wine and simmer, scraping bottom of pan to release any browned bits. Reduce heat to medium-low and add cream. Simmer gently until slightly thickened, about 5 minutes. Add thyme and season with salt and pepper, to taste.
4. Return chicken to skillet and top with mushroom Marsala sauce. Allow chicken to fully reheat in sauce, about 3-4 minutes. Garnish with additional thyme and serve.

Spinach and Artichoke Stuffed Mushrooms

These are literally the perfect bite!

Ingredients:
-1 T. olive oil
-1 c. chopped fresh spinach, packed
-1 c. jarred artichoke hearts, chopped
-8 oz. cream cheese, room temperature
-1/4 c. sour cream
-1/2 c. grated Parmesan cheese
-1 clove garlic, minced
-1/2 t. red pepper flakes
-1/4 t. kosher salt
-24 crimini mushrooms, cleaned, stems remove

Recipe:
1. Preheat oven to 375ºF. Line a rimmed baking sheet with parchment paper, and set aside. Heat olive oil in a skillet over medium heat. Add spinach and cook, until wilted, about 1 minute. Remove from heat, and add artichoke hearts.
2. Combine cream cheese, sour cream, spinach mixture, half the Parmesan cheese, garlic, red pepper flakes and salt in a large bowl, and mix well until combined.
3. Using two spoons, stuff each mushroom with about one heaping tablespoon of filling mixture. Place onto prepared baking sheet, and sprinkle with remaining Parmesan.
4. Bake until warmed through and cheese is golden-brown, about 15 minutes. Serve warm.

Steak with Herbed Sautéed Mushrooms for Two 💕

What’s more romantic than cooking up a juicy steak with savory, aromantic mushrooms?

Ingredients:
-4 T. unsalted butter, divided
-8 oz. white button mushrooms, cleaned
-2 T. chopped fresh herbs, like parsley, sage, rosemary or thyme, plus more for garnish
-1 t. kosher salt
-1/2 t. freshly ground black pepper
-1 (12-oz.) NY strip steak

Recipe:
1. Melt 2 T. butter in a small skillet over medium heat. Add mushrooms and herbs and sauté, stirring occasionally, until tender, about 4-5 minutes.
2. Meanwhile, season steak generously with salt and pepper. Heat remaining 2 T. butter in a large skillet over medium-high heat. Sear steak on all sides and cook to desired doneness. For a medium-well steak, cook until an internal temperature of 145°F is reached, about 3-5 minutes.
3. Remove steak from pan and let rest for at least 3 minutes. Slice and top with mushrooms. Garnish with additional parsley and serve.

Mushroom, Mozzarella and Cherry Tomato Pizza 🍕

This mushroom, mozzarella and cherry tomato pizza is just what you want while you cheer on your favorite sports team.

Ingredients:
-1 T. olive oil
-8 oz. mushrooms, such as white button or crimini, cleaned and sliced
-Kosher salt and freshly ground black pepper, to taste
-1 pound pizza dough, room temperature
-1 1/2 c. shredded fresh mozzarella
-1 pint cherry or grape tomatoes, halved
-2 cloves garlic, minced
-Chopped fresh oregano, for garnish
-Chopped fresh basil, for garnish

Recipe:
1. Place a large baking sheet, upside down, in the oven and preheat to 500°F.
2. Heat oil in large skillet over medium-high heat. Add mushrooms, season with salt and pepper; cook until light golden-brown and tender, about 5-7 minutes. Transfer to a plate and set aside.
3. On a lightly floured surface, press dough into a 10-inch circle. Transfer dough to parchment-paper-lined pizza peel.
4. Sprinkle mozzarella evenly over dough, leaving a 1/2-inch border. Top with cooked mushrooms, cherry tomatoes and garlic. Season with salt and pepper.
5. Quickly slide pizza onto prepared baking sheet and bake until dough is golden-brown and cooked through and cheese is melted, about 10-13 minutes. Top with oregano and basil. Slice and serve.
