Air Fryer Mixed Mushrooms
- 1/4 cup cornstarch
- 1/4 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup water
- 2 cups cornflakes, finely ground
- 8 ounces mixed mushrooms (crimini, shiitake, oyster, and sliced white button)
- Cooking spray
Garlic Aioli Dip
- 1/2 cup mayo (or vegan mayo substitute)
- 3 garlic cloves, mashed to a paste
- 1 tablespoon lemon juice
- 1 teaspoon dijon mustard
- Pinch of salt
Instructions
- In a bowl, add cornstarch, flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir in the water until you get a thick yet drippy batter.
- Preheat the air fryer to 360ºF. Toss the mushrooms in the wet batter then toss in the cornflake crumb mixture until fully coated.
- Arrange the mushrooms in the basket in a single layer and spray with cooking spray. Cook for 8 minutes. Repeat with the remaining mushrooms. Set aside.
- In a bowl, mix together the vegan mayo, garlic paste, lemon juice, dijon mustard, and salt until combined.
- Serve the air fried mushrooms with garlic aioli dip as an appetizer or inside a sandwich with the lettuce, tomato, and a generous spoonful of the garlic aioli. Enjoy!
