Air Fryer Mixed Mushrooms

  • 1/4 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/2 cup water
  • 2 cups cornflakes, finely ground
  • 8 ounces mixed mushrooms (crimini, shiitake, oyster, and sliced white button)
  • Cooking spray

Garlic Aioli Dip

  • 1/2 cup mayo (or vegan mayo substitute) 
  • 3 garlic cloves, mashed to a paste
  • 1 tablespoon lemon juice
  • 1 teaspoon dijon mustard
  • Pinch of salt

Instructions

  1. In a bowl, add cornstarch, flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir in the water until you get a thick yet drippy batter.
  2. Preheat the air fryer to 360ºF. Toss the mushrooms in the wet batter then toss in the cornflake crumb mixture until fully coated.
  3. Arrange the mushrooms in the basket in a single layer and spray with cooking spray. Cook for 8 minutes. Repeat with the remaining mushrooms. Set aside.
  4. In a bowl, mix together the vegan mayo, garlic paste, lemon juice, dijon mustard, and salt until combined.
  5. Serve the air fried mushrooms with garlic aioli dip as an appetizer or inside a sandwich with the lettuce, tomato, and a generous spoonful of the garlic aioli. Enjoy!
